Our Internationally Registered  Qualification-syllabus in professional Cookery is Ideal for people employed in the Hospitality industry  (but not necessary)  or seeking their International Qualification, but cannot leave their place of work to attend class-room lectures; or for people which are fresh from school, or anybody that would like to change their Career to the culinary industry. You can participate in our program full time or Part time.
 
Please read the documents attached for general course info. You can study with us full time or part time, you can enrol any time of the year. Registration fee of R 3000 should be paid when submitting your application form.

All our theory study material will be provided on a CD or is downloadable from our website. It is basically a self study course at home while you doing your practical work in a Hotel. The theory study manual will explain in detail what needs to be achieved. While you work as a trainee, you will earn a small salary that will assist topay off the course fee. We have specifically developed this strategy to enable the not so wealthy to get a qualification.

 If you are interested in working in the fast-paced, exciting and growing industry of Cookery, then this course is your ticket. This is a professional, full time or part time training program for aspiring chefs which we offer at Global Chef and Hospitality School.

Covering all aspects of working in a professional kitchen, you will learn food preparation, a range of cooking methods and techniques, la carte skills, stock management, menu planning and kitchen design.

You gain work experience plus have plenty of practical experience in a kitchen and restaurant facilities which provide lunch and dinner productions. You are required to find your own Work experience and apprentice ship placement, which needs to be approved by Global Chef and Hospitality school, this means you will go to actual workplaces and gain an insight and knowledge into the industry.

Our students gain work experience and should receive a Salary doing so. In other words, you can earn your Course fee back !!!

Outline

Program Outline for Culinary Arts

Food Preparation and Cooking: You will learn all the knowledge and techniques to be able to demonstrate a range of cooking methods such as - boiling, poaching, stewing, steaming, braising, deep frying, shallow frying, baking, roasting, grilling and microwave cooking. You will gain an understanding into the nutritional value of food and be able to identify and promote healthy eating options. You will be able to work with knives and utensils safely, without danger to yourselves and others and to understand the correct procedures of food preparation methods

Food Safety: You will be able to maintain effective personal hygiene when working with food to prevent cross contamination and methods to control hazards in a kitchen. You will be up to date with training of Industry standards around the safe storage and care of food

Food Preparation and Cooking (Culinary Arts): You will be able to prepare, cook and provide service in our training restaurant for a range of dishes. You will learn basic pastry techniques to produce a range of simple desserts, sweet slices and basic sauces. You will be able to design and plan food and beverage areas. You will be able to implement business plans and prepare and cost a range of menus and promotion and marketing options for a small food business

 

The culinary programmes are assessed by submitting written assignments and completing a practical task book which must be signed off by your kitchen supervisor, confirming your competence on all prescribed tasks.


How to enrol with Global Chef and Hospitality school:

Step 1
Submit an application form (see attached) via email, with a copy of your ID and CV.

Step 2
Global Chef and Hospitality School will contact you on receipt of application form

Step 3
Details regarding the qualification you have chosen and the terms and conditions will be sent on receipt of the application form.

The student will have to find (or Global Chef and Hospitality School can assist were possible) him/her self a place of work in the Hospitality Industry where the practical components will be covered during the studies, and earn a Salary! The student will be supervised by the line manager or assigned senior chef during the study period which could be anything between 12 – 18 Month. Should you not have completed the course within the maximum allowed 18 month time frame, then you are required to continue with monthly payments of R 2000.00 until you have completed the course
